White Turkey Chili

This is high protein low calorie meal

 

Ingredients:

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 can (4 oz) green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1/2 cup bulgur wheat (optional for added fiber)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.
  2. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the zucchini, green chiles, cumin, oregano, chili powder, salt, and black pepper. Cook for another 5 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the white beans and bulgur wheat (if using). Reduce the heat to low and let simmer for 20-25 minutes, or until the bulgur is tender and the flavors have melded together.
  6. Serve the chili hot, garnished with fresh cilantro.
