This is high protein low calorie meal
Ingredients:
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 can (4 oz) green chiles
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups low-sodium chicken broth
- 1 can (15 oz) white beans, drained and rinsed
- 1/2 cup bulgur wheat (optional for added fiber)
- Fresh cilantro, chopped (for garnish)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.
- Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the zucchini, green chiles, cumin, oregano, chili powder, salt, and black pepper. Cook for another 5 minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the white beans and bulgur wheat (if using). Reduce the heat to low and let simmer for 20-25 minutes, or until the bulgur is tender and the flavors have melded together.
- Serve the chili hot, garnished with fresh cilantro.
