Roasted Salmon with Spicy Cranberry Relish

This is high protein and low calories meal:

Ingredients:

  • 4 salmon fillets
  • 1 cup fresh cranberries
  • 1 apple, diced
  • 1 celery stalk, diced
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

 

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  3. Roast the salmon for 12-15 minutes, or until it flakes easily with a fork.
  4. Meanwhile, in a small saucepan, combine cranberries, apple, celery, honey, and red pepper flakes. Cook over medium heat until cranberries burst and the mixture thickens.
  5. Serve the salmon topped with the spicy cranberry relish.
