Quinoa and Black Bean Stuffed Peppers

This is high protein and low calories meal.

Ingredients:

  • 4 bell peppers, halved and seeded
  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

Preheat your oven to 375°F (190°C).

In a large bowl, combine quinoa, black beans, corn, tomatoes, cumin, chili powder, salt, and pepper.

Stuff each bell pepper half with the quinoa mixture.

Place stuffed peppers in a baking dish and bake for 25-30 minutes, or until peppers are tender.
