
This is high protein low calorie meal
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup crumbled feta cheese
- 1/2 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
- In a bowl, mix together the feta cheese, roasted red peppers, and spinach.
- Stuff each chicken breast with the feta mixture and secure with toothpicks if necessary.
- Season the chicken breasts with salt, pepper, oregano, and garlic powder.
- Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove from the oven and let rest for a few minutes before serving.
